The small town of Louisburg in Miami County, Kansas, is bordered by breathtaking scenery that can transport visitors back to the time of the pioneers. Originally settled by Native Americans of the Confederated Tribes, the town began to develop in the 1850s with the arrival of missionaries and traders. Louisburg is located on the historic Frontier Military Scenic Byway, and its Little Round House, once used as a port of entry, is a popular tourist site. This and other attractions, such as lush woodlands, cowboy towns, prairie land and outdoor trails, can easily whip up a healthy appetite in tourists and explorers. Despite its diminutive size, Louisburg boasts a fistful of restaurants, several serving Mexican food.

La Mesa Mexican Restaurant is part of a small midwestern chain founded by Jalisco-born Francisco Onate in 1993. It serves a lunch and dinner menu of classic, familiar Mexican dishes, including guacamole dips and tortilla soup appetizers, entrees of burritos and enchiladas, and desserts of fried ice cream and chimi dulce. There is a take-out menu for those in a hurry, and especially spicy dishes are handily indicated by a small red chile on the menu. Try the fish and seafood specialties inspired by the Gulf of Mexico, or grilled chicken breast marinated in a tangy tequila sauce.

Santa Fe South Mexican Food & Cantina

This small, family-run restaurant serves authentic Mexican food in informal surroundings. It is open for lunch and dinner seven days a week, with extended hours in the evening on Fridays and Saturdays. The complimentary chips and salsa are a big hit, and the chimichangas are stuffed with juicy meat. Santa Fe accepts all major credit cards and can cater to small functions and parties.

Timbercreek Bar & Grill

The Timbercreek Bar & Grill is open for breakfast, lunch and dinner seven days a week, and is especially busy during Sunday brunch. Although it is better known for traditional American fare, such as mac and cheese, burgers, buffalo wings and steaks, it does have a few Mexican dishes to choose from. These include a chicken or meat-free cheese quesadilla and a tortilla chip appetizer served with mild salsa, nacho cheese sauce and sour cream. There is live music on Friday and Saturday nights until midnight, and the karaoke on Thursday evenings is fun, especially washed down with a glass of locally brewed Louisburg cider. The bar and grill is smoke-free since January 2010, following customer requests, but there is an outdoor deck area for those who still wish to light up.
