Mackerel fishing in Florida is a particularly exhilarating adventure. In my lifetime of fishing, I have managed to catch a few mackerel. Should you be so lucky, you had better have on hand a good recipe. If not, then you might as well catch and release; because in my opinion, a mackerel uncooked is a mackerel gone to waste.
Mackerel Fishing Recipe Tips
My favorite mackerel recipe calls for two small, freshly caught mackerel, the juice from one large grapefruit, one minced sweet onion, two teaspoons brown sugar, one half cup orange juice, one quarter cup of vodka and two tablespoons of butter. First, mix the vodka and the grapefruit juice, and then marinate the fish in this mixture for one hour.
Once the mackerel is done marinating, grill it for 5-10 minutes on each side (this time will vary depending on the thickness of your fish). While your fish is cooking, saute the onion in the butter for approximately three minutes on medium heat, and then add the sugar, the left over marinade and the orange juice. Once the fish is done, immediately garnish it with the sauce and serve.
I guarantee that the moment you taste this recipe, you will be hooked. I discovered it years ago in an old homemade cookbook and make it every time I have some spare fresh mackerel on my hands (which unfortunately isn't too often).
